Be ready! Bellow is just some recipes for a special day. Yeast Crisps Makes about 100 1 packet yeast, 1/3 cup warm water, 1 cup margarine, softened, 1/8 teaspoon salt, 2 cups flour, 1 cup sugar Put warm water in a small bowl and stir the yeast into the water. Set aside. Mix togethermargarine, salt and flour. Stir in yeast and water until well blended. Chill for 1 hour. Putthe sugar in a small bowl. Form 1-inch diameter balls of dough and roll them in the sugar.Place the balls in a shallow pan and chill for 30 minutes. Preheat oven to 350°F. Linecookie sheets with parchment paper. Dust a work surface and rolling pin with a mixture offlour and sugar for rolling out the cookies. One by one, place each ball on the work surfaceand press it flat with the ball of your hand. Turn it over and press again. This coats the ballwith some flour and sugar to keep it from sticking. Roll out the dough very thin, about1/16 inch or less, or until the dough makes a rectangle about 3”x2”, then cut in halfcrosswise. Pick up the very thin dough with a sharp wide knife such as a chef’s knife andplace it on your prepared cookie sheet. Let rest for 30 seconds then bake for 6-8 minutesor until crisps are golden brown. Remove from oven and let cool one minute. Removecrisps to a wire rack to cool completely. Store in an airtight container in the refrigeratorfor up to 2 weeks. Makes about 100 crisps. Basler Brunsli 1-1/2 cups almonds, 1 cup granulated sugar, 1/2 cup powdered sugar, 6 oz bittersweet chocolate, chopped, 1 teaspoon cinnamon, 1/2 teaspoon ground cloves, 2 egg whites In a food processor, process the almonds and sugars until the almonds are powder-finebut not oily; stop the processor and scrape down the sides several times. Add chocolateand mix until fine, being careful to not overmix and cause the chocolate to heat up andmelt. Add spices and egg whites and mix until dough forms a mass. Chill dough for about1/2 hour. Preheat oven to 350 F.Line a baking sheet with parchment paper. Generously dust a work surface with powderedsugar. Roll dough to 1/2 inch thickness. Cut with a 2 inch heart-shaped cookie cutter(hearts are traditional, but you can cut them to any shape you want). Place cookies onbaking sheet. Put cookies into the oven and immediately reduce the temperature to 325F.
